2-3 bunches of broccoli

2 packs of rice noodles

1 bag of shrimp, peeled

1 bag of calamari

1 bag of scallops

(*Trader Joe’s has a bag of shrimp, calamari & scallops)

1 box of vegetable broth

1/2 red onion

2 cloves of garlic

1 packet of bean sprouts

1 pack of mushrooms or vegetable of your choice


Bring your broth to a boil, then turn down to a low simmer. Saute your seafood in a pan with 2 tbsp. of olive oil. After 5 minutes or stirring your seafood, add in your chopped onions and garlic. Salt & pepper to taste. Toss your veggies (minus your broccoli)  in the pan and allow them to soak up the seafood’s seasonings.

Add your broccoli to the broth and keep simmering on low. After 20 minutes, add in your seafood. Allow to simmer on low for another 15 minutes, then add in your rice noodles and cook until noodles are soft. Pour your soup into your bowl and top with bean sprouts. They add crunch and a yummy flavor.
